Sara’s Veggie Batter Pudding

(Serves 2)


 

Ingredients:

For the batter:

  • ¼ lb plain flour, 
  • 1 egg, 
  • ½ pint milk,
  • ¼ tsp salt,

 

Vegetables:

  • Carrots, 
  • Parsnip, 
  • Sweet potato, 
  • Onion, 
  • Celeriac,
  • Aubergine, 
  • Courgette.

 

Recipe:

Mix flour egg and a little milk in blender until smooth and full of bubbles, then add rest of milk. Cover and leave for 30 minutes. 

 

                    Cut your selection of root vegetables into chunks and then Steam or parboil. Then heat oil in baking tin in oven at 200°, add the vegetables, and toss in hot oil. Then add the batter and cook in centre of hot oven until risen and brown. 

 

Then lower heat and continue cooking for 15 minutes on 180°. The pudding can rise high like Yorkshire pudding. Enjoy with mashed potatoes and your favourite green vegetables and perhaps onion gravy.
